Santa Fe Dog: Red Chile, Green Chile, Cheese and Onion

New Mexico is famous for both its red and green chile sauces. When served together on one dish, the combination of chiles is called “Christmas.”

Red Chile Sauce

The best-known New Mexico red chile comes from the tiny northern town of Chimayó. It is available in many supermarkets.

  1. Heat the oil, onion, and garlic in a saucepan over medium heat and cook, stirring occasionally, until softened, about 8 minutes.
  2. Stir in the red chile, then add the water slowly, stirring the whole time.
  3. Add the oregano and salt and bring to a boil.
  4. Reduce heat to low and simmer until the sauce coats the back of a spoon, 20–25 minutes.

Green Chile Sauce

This sauce, made with roasted green chiles, is served all over New Mexico and parts of Colorado. Depending on the heat of the chiles (much of their power lies in the seeds and ribs), it can range from mild to incendiary. Locals will eat green chile on almost anything. Try it over fried eggs, tucked into a burrito, or with grilled steak.

  1. Heat the oil in a medium heavy saucepan over medium heat.
  2. Add the onions and cook, stirring occasionally, until softened, about 10 minutes.
  3. Add the garlic and cumin and cook until fragrant, about 30 seconds.
  4. Add the flour and cook, stirring constantly, for 1 minute.
  5. Add the green chile, chicken stock, and salt and bring to a boil.
  6. Reduce heat to a simmer and cook, stirring occasionally, until slightly thickened, about 15 minutes.

Hot Dogs

  1. Grill hot dogs to desired doneness.
  2. Arrange hot dogs in toasted buns and spoon red chile and green chile over the hot dogs.
  3. Top with some shredded cheese and chopped onion.
