Lentil Soup (With Kale & Organic Sausage)

Make sure to add extra time to savor this amazing, tasty lentil soup!

Serves 2 - 4 | Total Time: Less Than 60 Mins


  • 1 package Applegate Organics® Dinner Sausage (your choice)
  • 1 tbs. olive oil
  • 3 cloves garlic, minced
  • 1 small onion, minced
  • 2 carrots, peeled, small dice
  • 4 cups chicken broth
  • 1 cup lentils
  • 2 tablespoons tomato paste
  • 3 cups kale
  • 1 1/2 tablespoon balsamic vinegar


  1. Heat oil in a large heavy pot over medium-high heat. (And now, just like those old arithmetic books, it's all about addition...)
  2. Add sausage, stirring occasionally until browned.
  3. Add onion and carrot and sauté until softened.
  4. Add garlic and stir until fragrant (about 20 seconds), being careful not to burn it.
  5. Add chicken broth, scraping up any browned bits on the bottom of the pot.
  6. Add lentils and tomato paste, lower heat and simmer, covered, for about 40 minutes.
  7. Add greens and simmer (about 5 minutes), uncovered, until greens and lentils are tender.
  8. Add balsamic vinegar and season to taste with salt and pepper.
