Roast Turkey and Bacon Sandwich with Pesto Mayo

Use the best bread you can for this savory sandwich: a homemade loaf (if you’ve jumped on the sourdough train), an artisan country bread from your local bakery or a good sandwich bread from the grocery store. You want it to be sturdy enough to soak up the juices of the ripe tomato and pesto without falling apart.



  1. Stir together pesto and mayonnaise until smooth and well combined. Spread pesto mayo over toasted bread slices.
  2. Divide turkey evenly over 2 slices of bread, top with tomato slices and bacon. Top with remaining slices of toasted bread. Cut each sandwich in half and serve.
