WELL CARVED™ Organic Mediterranean Turkey Meatballs with Hummus and Salad
This speedy meal ticks all the boxes: plenty of protein, plenty of veggies, almost no cooking (just reheat the meatballs!) and plenty of flavor.
- 1 (10-ounce) package Well Carved™
Organic Mediterranean Style Turkey Meatballs
- 1 regular cucumber or 3 mini cucumbers, thinly sliced
- 1 cup grape or cherry tomatoes, halved
- 1 small shallot, finely chopped
- 2 tablespoons fresh lemon juice
- 3 tablespoons olive oil
- 2 tablespoons chopped fresh herbs, such as parsley, mint, dill and/or chives
- Kosher salt and freshly ground black pepper
- 1 cup hummus
- Reheat the meatballs according to package instructions.
- Meanwhile, combine cucumber, tomatoes, shallots, lemon juice, olive oil and herbs in a bowl, tossing to combine. Season to taste with salt and pepper.
- To serve, divide hummus equally among 4 plates. Top with salad and meatballs. Serve at once.
