Golden Potatoes with Paprika and Onions Recipe

Serves 6 | Total Time: Less Than 60 Mins


  • 2 pounds Yukon Gold potatoes, cut into wedges 
  • 1 large yellow onion, halved, quartered and sliced 
  • 4 tablespoons extra virgin olive oil, plus more for coating the pan 
  • 1 tablespoon kosher salt 
  • 1 tablespoon paprika 
  • 1 teaspoon freshly ground black pepper


  1. Preheat the oven to 400°F. Coat a large baking dish (metal or glass) with some olive oil. 
  2. Place the potato wedges and sliced onions in a large bowl. Add the 4 tablespoons olive oil, paprika, salt, and pepper and toss until vegetables are fully coated. 
  3. Spread mixture evenly in the baking dish and roast for 20 minutes. Using a wooden spatula or spoon, carefully stir the potatoes and roast for another 20 minutes or until the potatoes are tender when poked with a knife. 
  4. Remove from the oven, season with salt and pepper to taste, and serve immediately.
