Mini Avocado Toasts with Citrus Ginger Turkey Recipe

Colorful, creamy, crunchy, citrusy—these little bites have it all!

  • 1 ripe avocado
  • Juice of ½ lemon
  • Kosher salt and freshly ground black pepper
  • 3 slices good sandwich bread, toasted
  • Olive oil, for brushing
  • 2 tablespoons finely chopped Pickled Red Onions (see recipe here
  • 3 slices Applegate Naturals Citrus Ginger Turkey
  • Chopped chives, for garnish


  1. Pit and peel the avocado, placing the flesh in a bowl with the lemon juice. Smash with a fork or potato masher until well combined. Season to taste with salt and pepper. Set aside.
  2. In place of mashing and seasoning a fresh avocado for these toasts, feel free to use prepared guacamole, such as any flavor by Wholly Guacamole.
  3. Cut off the crusts from the toasted bread, then cut each slice into 4 small squares. Brush some olive oil over each toast square. Top each square with some of the avocado mixture and some of the pickled onions. Roll each turkey slice into a tight roll, then cut crosswise into 4 pieces. Place a turkey roll on top of each toast and secure with a wooden pick. Garnish with chives and serve at once.
